Swiss Cheese Chicken: (Serves 6)

Clam Chowder

INGREDIENTS:
1/2 cup chopped onion |  1/4 cup butter |  3 (6 oz) cans minced clams |  2 cups diced potatoes |  2 cups whipping cream |  1 tsp salt |  dash white pepper
DIRECTIONS:
In saucepan, saute onion in butter until crisp-tender. Drain minced clams reserving liquids. Measure reserved clam liquid and add water to make 1 1/2 cups. Add clam + water liquid to onion, cover and simmer 20 minutes or until potatoes are tender. Stir in clams, whipping cream, salt and pepper. Heat gently, stir frequently and never boil.
